The topography of Hiroshima Prefecture is characterized by the presence of many rivers. The area around Miyajima is blessed with nutrients rich in minerals flowing out from these rivers, making it a fishing ground where high quality oysters grow. We use our many years of experience and research to procure and serve the highest quality oysters, as well as specially ordered large, rich oysters that are difficult to find in the general market.
It grew up to the point where it extruded from the shell, and because of its good body, you can see how blessed the sea area around Miyajima is. Many oysters, such as overseas, are characterized by a salty taste that contains a lot of seawater, but the oysters around Miyajima are impressive in sweetness and richness, and you can feel the taste of the oyster itself. Perhaps because the nutrients of the oysters themselves are strong, grilling shrinkage is less likely to occur than other oysters, and we believe that oysters that can withstand the cooking process of producing “oyster shop oil pickles” can only be done with oysters grown in this area.
We identify oysters purchased based on experience, grasp the condition, and slightly change the cooking method, the amount of heat, the amount of sauce, etc. There are no oysters that are the same as a day, and we are constantly devising ways to bring out the usual taste.
Small oysters that do not meet the standard and oysters with insufficient penetration of the sauce are sifted, and only convincing oysters are carefully bottled by hand one by one.
